Superbowl Eats

I can’t remember ever enjoying a Superbowl. Ever. In fact, I don’t think I’ve ever watched a Superbowl start to finish before. Sure, I did drowse off somewhere in the third quarter, but the Cardinals turned it around and played some mean football. It sure would have been nice if we actually won, but at least it was an exciting game.

I’m also very proud of myself. I brought some clean eats to the Superbowl party, so that I would have something healthy to munch on. It worked! No artery clogging chicken wings or cheesecake brownies for me. In fact, I wasn’t even tempted. It could be the awesome results I’ve achieved in only two weeks. (As of this morning’s weigh-in, I’ve lost 7 pounds so far…more details to come!)

First, I made a veggie platter with hummus. Doesn’t it look festive? The hummus is from Fresh ‘N Easy, and it’s pretty dang good for the price. I HIGHLY recommend it. The same bunch of boys who complained about the healthiness of the dish pretty much cleaned out this entire plate of veggies…so I consider it a bonafide success! Pretty simple too.

Can’t forget about the sweets! I also dipped strawberries in dark chocolate. I first tried using a Nestle Chocolatier baking bar, but it didn’t melt very well. So I ended up making a run to good old faithful Trader Joe’s and purchasing a "Pound Plus" Belgian chocolate 72% dark chocolate baking bar, which was a steal for only $3.99. Half of the pound was more than enough to dip three pints of strawberries.  It melted easily in the microwave, and they tasted delicious ;)

Geez,  just looking at the pictures makes me want to go devour the leftovers. Must. Exert. Will. Power.

    Oh man!!!! LOOK at those strawberries! I love strawberries, what a cruel daughter you are. It all looks great, all I made was a huge thing of guaucamole. yummmmmmy!
