I made this a week ago, but I’m just getting around to posting it. This was my first attempt at anything by the infamous Rachael Ray. It’s from her cookbook "Top 30 30-minute Meals: Comfort Food." Comfort food, indeed. Nothing more basic than a casserole consisting of ground beef and potatoes. AKA standard North Dakota fare.
It took me a bit longer than 30 minutes, but not exceedingly so. Definitely an easy dinner option. My favorite part was the nummy gravy. And the recipe made WAY too many potatoes, but I just piled them on anyway. Hehe. Mike prefers a 9:1 meat to everything else ratio, however, and he made sure to remind me for the NEXT time I make one of his favorite meals.
