Last night I made up the last batch of my special thai yellow curry (the curry paste took me 5 hours to make from scratch one Saturday afternoon, so this is special curry).  This time I made it with tofu and vegetable broth instead of the usual chicken/chicken broth. A little experiment in vegetarian cooking. The curry tastes better if you let the flavors meld overnight, which is why I cooked it a day ahead of time.
